¾cupcoconut yogurt
1tablespooncaster sugar

Instructions
Combine all the marinade ingredients and pour over tofu. Marinate tofu for 30 minutes or up to a few hours or overnight.
Bring a deep pan to medium heat with the butter - add the tofu mix and sauté for 5 minutes.
Mix through the tomato passata, coconut yogurt, and sugar and simmer for 10 minutes. Depending on the thickness of your yogurt, you may need to add ½ cup of water to get a silkier sauce. If it's a bit too runny, continue to simmer until it thickens up.
