Looking for the best vegan butter chicken recipe ever? My Butter Tofu recipe is sweet, mildly spicy and super delicious. Tofu is the perfect replacement for chicken, it's high in protein, super easy to prep and is amazing at absorbing flavours.

When I was vegan I would make different versions of this allll the time. I realised I hadn't had it in ages and really missed it. Tofu curries always hit the spot!

Here's everything you'll need for this Butter Tofu Recipe

- Tofu
- Coconut Yogurt
- Garlic
- Ginger
- Chilli Flakes
- Turmeric
- Cumin
- Garam Masala
- Passata
- Lemon
- Sugar

Hint: You can mix the marinade with the tofu and cook it right away but if you can let the tofu sit in the marinade for a few hours it will be even better!
Substitutions
- Chicken: If you would prefer to use chicken you can! This recipe was amended from a butter chicken recipe so you can simply swap the tofu with diced chicken and cook the same way.
- Chickpeas: if you aren't a fan of soy or meat, you can use two cans of drained chickpeas. I've had this a few times too and it's delish!
- Yogurt: If you don't love coconut yogurt you can swap it for coconut milk, greek yogurt or cream.
- Spice: this recipe is mild-medium spice. You can use less chilli flakes to make it less spicy.
Storage
Store Butter Tofu in the fridge for up to 4 days, or freeze for a few months.

Butter Tofu
Ingredients
Marinade:
- 400 g tofu extra firm, cut into cubes
- ½ cup coconut yogurt
- 1 tablespoon garam masala
- 1 teaspoon cumin
- 1 teaspoon chilli flakes or chilli powder
- ½ teaspoon turmeric
- 1 tablespoon ginger minced, or 2 teaspoon of ginger powder
- 4 garlic cloves minced
- ½ lemon juiced
- ½ teaspoon sea salt flakes
The rest:
- 3 4 cup tomato passata
- ¾ cup coconut yogurt
- 1 tablespoon caster sugar
- ½ teaspoon sea salt flakes
- 1 tablespoon butter vegan, or use olive oil
- Basmati rice and fresh coriander to serve
Instructions
- Combine all the marinade ingredients and pour over tofu. Marinate tofu for 30 minutes or up to a few hours or overnight.
- Bring a deep pan to medium heat with the butter - add the tofu mix and sauté for 5 minutes.
- Mix through the tomato passata, coconut yogurt, and sugar and simmer for 10 minutes. Depending on the thickness of your yogurt, you may need to add ½ cup of water to get a silkier sauce. If it's a bit too runny, continue to simmer until it thickens up.
- Serve with bastamti and coriander and enjoy!
