Ingredients
  

  • 1 cup orzo
  • 4 garlic cloves minced
  • 2 tablespoon onion powder
  • 2 tablespoon butter salted
  • 2 cups/500ml chicken stock
  • cup thickened cream
  • 1 lemon
  • cup parmesan grated
  • 2 tablespoon basil or dill, thinly sliced
  • sea salt flakes

Instructions
 

  • Bring a large pan to medium heat and melt the butter.
  • Add the garlic and onion powder with a pinch of salt and sauté for 1 - 2 minutes.
  • Add the orzo and chicken stock to the pan and mix. Let the orzo slowly cook and absorb the stock, stirring occasionally to ensure the orzo doesn't stick.
  • After 6 - 8 minutes the orzo will 80% cooked. Add the zest of half the lemon and the juice of the whole lemon, the cream and the parmesan and stir through. Continue to cook until orzo is just cooked enough then turn off the heat.
  • Transfer to serving bowls, top off with an extra drizzle of olive oil, extra parmesan and the basil. Enjoy!

Notes

  1. Stir Frequently: Stir the orzo frequently to prevent it from sticking to the pan and ensure even cooking.
  2. Adjust Consistency: If the orzo absorbs too much liquid and becomes too thick, add a bit more stock or water to achieve the desired consistency.
