Crispy Butter Beans is a simple and delicious dish that's perfect as a snack, entrée, or side dish. This recipe combines tender butter beans with fragrant rosemary, garlic, and red onion, all roasted to golden perfection. It's an easy, flavourful, and versatile addition to any meal.

- 2 cans butter beans rinsed and drained
- 1 red onion thinly sliced
- 1 bulb garlic / 8+ cloves separated and peeled
- 1 sprig rosemary just the leaves
- 1 teaspoon sea salt
- ¼ cup olive oil
Preheat oven to 200C.
Add the oil to a baking dish and place in the oven for the oil to heat up for 15 minutes.
Take the tray out of the oven and add the beans, onion, garlic, rosemary leaves and salt to the oil. Give it a good mix then place back in the oven.
Roast for 25 - 35 minutes, tossing half way through. When they are super golden brown and crispy they are ready.
Eat as is as a little snack, entre or side dish.
