Curried Grated Egg Toastie

This Curried Grated Egg Toastie is the perfect quick brunch or lunch toastie. The texture of grated egg feels light and fluffy, and when paired with curry powder, mayo and dill it makes for a delicious meal.

- 2 slices sourdough bread
- 3 eggs hard boiled (10 minutes) and cooled
- 1 tablespoon mayonnaise kewpie
- 1 teaspoon mustard american
- 1 teaspoon curry powder
- 1 tablespoon dill finely chopped
- ¼ teaspoon sea salt fine/kosher salt
- black pepper
- ½ tablespoon butter salted
- parmigiana reggiano or parmesan, finely grated
Grate the eggs though a fine grater into a bowl and combine with the mayonnaise, mustard, dill, salt and pepper.
Scoop the egg mixture onto a slice of sourdough and grate a light later of parm on top then place the other slice of bread on top.
Bring a pan to medium heat with the butter. Once the butter is melted, add the sandwich and grill on each side for a couple of minutes until golden.
Remove from the pan, allow to cool for a couple of minutes and enjoy!
