    Curried Grated Egg Toastie

    This Curried Grated Egg Toastie is the perfect quick brunch or lunch toastie. The texture of grated egg feels light and fluffy, and when paired with curry powder, mayo and dill it makes for a delicious meal.

    Since I first started food blogging years ago, I've made it a mission of mine to see how many ingredients shred well in a cheese grater. Shredded/grated tofu has been a long time fave, and egg just so happens to be fabulous grated as well.

    This recipe was inspired by my Shredded Egg Toastie, but if you're not in the mood for egg, you could also try my Tofucado Shredded Tofu Pesto Sandwich. I'm think I'll see how paneer goes through a grater next, so stay tuned for that!

    Why you need to make this Curried Grated Egg Toastie

    1. It's so simple to make. All you need to do is boil some eggs, grate and mix them with a couple really simple ingredients, slap it between some fresh sourdough bread and grill the sandwich in a pan and you're done!
    2. It's s super tasty. Eggs and mayo is already such a winning combo, adding the curry powder transforms an average egg salad flavour into something spicy and a bit more fun.
    3. It's a twist on a classic, but still simple. We all love a good egg salad, but this Curried Grated Egg Toastie is elevated in a way that still keeps it attainable and straight forward.

    Eggs: The base of the recipe, rich and creamy when grated, and perfect for absorbing flavour
    Kewpie mayonnaise: Adds richness and a slight sweetness that balances the curryAmerican mustard: Brings tang and sharpness to cut through the richness
    Curry powder: Warm, aromatic and what gives this toastie its signature flavour
    Dill: Freshness that lifts the whole filling and stops it feeling heavy
    Sea salt: Enhances all the flavours and balances the filling
    Black pepper: Adds a gentle heat and depth
    Butter: Helps create that golden, crispy toastie exterior
    Parmesan: Salty, nutty and melts into the filling for extra umami
    Sourdough bread: Holds everything together and crisps up beautifully

    Instructions

    Step 1: Grate the boiled eggs

    Step 2: Mix the mayo, mustard, dill, salt and pepper into the grated egg

    Step 3: Scoop the mixture onto a slice of sourdough and grate over some parm

    Step 4: Grill in a pan on both sides until crisp and golden (don't over cook!)

    Hint: Make sure your eggs are cold before grating, this will make the grating much easier.

    Why I love grating egg

    Grating eggs completely changes the texture in the best way. Instead of chunky pieces, you get a light, fluffy mixture that blends evenly with mayo and seasoning, so every bite is properly balanced. It also spreads more easily, giving you edge-to-edge filling in a toastie. It feels a bit random, which I love, but once you try it, it just makes sense. It’s such a small tweak that makes a simple egg toastie taste so much better.

    What curry powder should you use for this recipe?

    Honestly, any standard Indian curry powder will taste good in this, but this is the brand I use.

    Storage

    You can make the grated egg mixture and store it in the fridge for 2 days. I wouldn't store the assembled sandwich together for more than a few hours unless you want a soggy sandwich!

    Help! I can't grate the yolk, it's just crumbling.

    I ran into this issue when I was grating my eggs, I found the best way to get the yolk through the grater was to push it through using the palm of my hand as opposed to trying to keep the egg in once piece and get it through.

    Yes, and it completely changes the texture. Grated eggs become light and fluffy, which helps them mix more evenly with sauces and seasoning.

    Why grate eggs instead of chopping?

    Grating creates a softer, more cohesive filling. You don’t get big chunks, and every bite tastes more balanced.

    Ingredients
      

    • 2 slices sourdough bread
    • 3 eggs hard boiled (10 minutes) and cooled
    • 1 tablespoon mayonnaise kewpie
    • 1 teaspoon mustard american
    • 1 teaspoon curry powder
    • 1 tablespoon dill finely chopped
    • ¼ teaspoon sea salt fine/kosher salt
    • black pepper
    • ½ tablespoon butter salted
    • parmigiana reggiano or parmesan, finely grated

    Instructions
     

    • Grate the eggs though a fine grater into a bowl and combine with the mayonnaise, mustard, dill, salt and pepper.
    • Scoop the egg mixture onto a slice of sourdough and grate a light later of parm on top then place the other slice of bread on top.
    • Bring a pan to medium heat with the butter. Once the butter is melted, add the sandwich and grill on each side for a couple of minutes until golden.
    • Remove from the pan, allow to cool for a couple of minutes and enjoy!
