    • Spring onion: Finely sliced spring onion adds a subtle onion flavour and freshness to the egg mixture, complementing its creamy texture.

    Instructions

    Boil, chill then grate the eggs into a bowl

    Mix in the mayo, spring onion, mustard, salt and pepper

    Scoop the mixture onto your bread then grate the parmesan

    Grill the sandwich in some butter and enjoy!

    Hint: Boil the eggs for exactly 10 minutes, then transfer them to ice water to stop the cooking process and ensure they are easy to peel and grate.

    Substitutions

    1. Wholegrain Mustard: If you prefer a more robust flavour, you can substitute wholegrain mustard for the American mustard.
    2. Chives: Instead of spring onion, you can use chopped chives for a milder onion flavour in the egg mixture.
    3. Cheddar Cheese: Swap out the Parmesan cheese for grated cheddar cheese for a gooey and melty texture in the toastie.

    Ingredients
      

    • 3 eggs
    • 2 tablespoon mayonnaise
    • 1 spring onion thinly sliced
    • ¼ teaspoon sea salt
    • ¼ teaspoon pepper
    • 1 teaspoon american mustard aka yellow mustard
    • 2 slices sourdough bread
    • 2 tablespoon parmesan cheese finely grated
    • 1 tablespoon salted butter

    Instructions
     

    • Bring a pot of water to boil, add the eggs and boil for 10 minutes. Add the eggs to a bowl of ice water and let them sit for 10 - 15 minutes. You want the eggs to be nice a cold so they are easy to peel and grate.
    • Peel the eggs then grate into a bowl, some bits will break off as you're grating them, you can just leave them as is or push them back through the grater.
    • Add the mayo, spring onion, mustard, pepper and salt to the grated eggs and mix with a spoon until combined.
    • Scoop the egg mixture onto a slice of sourdough bread, grate some parmesan on top then add the other slice of bread on top.
    • Bring a pan to medium heat and melt the butter in the pan. Place the sandwich into the pan and grill on each side for a few minutes until golden brown. Enjoy!
