Bring a pot of water to boil, add the eggs and boil for 10 minutes. Add the eggs to a bowl of ice water and let them sit for 10 - 15 minutes. You want the eggs to be nice a cold so they are easy to peel and grate.
Peel the eggs then grate into a bowl, some bits will break off as you're grating them, you can just leave them as is or push them back through the grater.
Add the mayo, spring onion, mustard, pepper and salt to the grated eggs and mix with a spoon until combined.
Scoop the egg mixture onto a slice of sourdough bread, grate some parmesan on top then add the other slice of bread on top.
Bring a pan to medium heat and melt the butter in the pan. Place the sandwich into the pan and grill on each side for a few minutes until golden brown. Enjoy!
