Easy Shakshuka

- 4 eggs
- 1 can cherry tomatoes or diced tomatoes
- 4 sweet capsicums or ½ a regular red capsicum, thinly sliced
- ½ brown onion thinly sliced
- 1 teaspoon chilli flakes
- 3 garlic cloves minced
- 2 tablespoon parsley finely chopped
- ½ teaspoon paprika
- ½ teaspoon cumin
- 2 serves sourdough toasted and buttered
- 1 tablespoon olive oil
Bring a small/medium sized pan to medium heat with the olive oil.
Add the onion and capsicum with a big pinch of salt and sauté for 3 - 5 minutes.
Add the garlic, chilli flakes, cumin and paprika and sauté for a further 2 minutes.
Add the tinned tomatoes with the parsley, if using cherry tomatoes, use a wooden spoon to break them down. Mix and bring to a slow simmer. Season with extra salt and pepper as needed.
Crack 4 eggs over the top of the tomato mixture and then place the lid on and simmer until eggs are just cooked enough (they will continue to cook for a minute or so once the heat is off)
Top off with an extra sprinkle of paprika and parsley, serve with toasted sourdough and enjoy!
