    Ingredients

    Everything you'll need for this Easy Shakshuka

    • Eggs: Provide protein and richness to the dish, creating a creamy texture when poached in the tomato sauce.
    • Cherry tomatoes: Form the base of the sauce, adding sweetness and acidity to balance the spices.
    • Sweet capsicums (bell peppers): Add sweetness and crunch to the dish, along with a pop of colour.
    • Onion and garlic: Provide aromatic flavour and depth to the sauce, enhancing its overall taste.
    • Spices: Add warmth and complexity to the dish, infusing it with rich, smoky flavors.
    • Parsley: Adds freshness, complementing the spices and brightening the dish.
    • Sourdough bread: Serves as the perfect accompaniment for soaking up the flavourful sauce.

    Substitutions

    1. Sweet capsicums: Substitute with capsicums of any colour or use roasted red peppers for a different flavour profile.
    2. Sourdough bread: Replace with crusty bread, pita, or naan for serving.
    3. Cherry tomatoes: If cherry tomatoes are not available, canned diced tomatoes or fresh tomatoes can be used as a substitute.

    Ingredients
      

    • 4 eggs
    • 1 can cherry tomatoes or diced tomatoes
    • 4 sweet capsicums or ½ a regular red capsicum, thinly sliced
    • ½ brown onion thinly sliced
    • 1 teaspoon chilli flakes
    • 3 garlic cloves minced
    • 2 tablespoon parsley finely chopped
    • ½ teaspoon paprika
    • ½ teaspoon cumin
    • 2 serves sourdough toasted and buttered
    • 1 tablespoon olive oil

    Instructions
     

    • Bring a small/medium sized pan to medium heat with the olive oil.
    • Add the onion and capsicum with a big pinch of salt and sauté for 3 - 5 minutes.
    • Add the garlic, chilli flakes, cumin and paprika and sauté for a further 2 minutes.
    • Add the tinned tomatoes with the parsley, if using cherry tomatoes, use a wooden spoon to break them down. Mix and bring to a slow simmer. Season with extra salt and pepper as needed.
    • Crack 4 eggs over the top of the tomato mixture and then place the lid on and simmer until eggs are just cooked enough (they will continue to cook for a minute or so once the heat is off)
    • Top off with an extra sprinkle of paprika and parsley, serve with toasted sourdough and enjoy!
