Ingredients
  

  • 1 cup orzo pasta
  • 3 leeks small, or 2 large leeks, chopped into bite size pieces
  • 180 g greek feta crumbled
  • 4 baby cucumbers 1 large cucumber, finely diced
  • 100 g baby spinach finely chopped
  • ½ red onion finely diced
  • 1 lemon juiced
  • ½ lemon zest
  • 1 teaspoon oregano dried
  • ½ cup basil finely chopped
  • Salt
  • Pepper
  • Olive oil extra virgin

Instructions
 

  • Preheat oven to 200C, line a small baking tray with baking paper. Add the leek to the tray and drizzle over olive oil, salt and pepper. Roast for 15 - 20 minutes or until super golden brown.
  • Cook pasta to packet instructions, drain and leave aside.
  • Once the leek and pasta is cooked, add all the ingredients to a large mixing bowl and combine. Season with extra salt and pepper as needed
  • Enjoy!
