3leekssmall, or 2 large leeks, chopped into bite size pieces
180ggreek fetacrumbled
4baby cucumbers1 large cucumber, finely diced
100gbaby spinachfinely chopped
½red onionfinely diced
1lemonjuiced
½lemon zest
1teaspoonoreganodried
½cupbasilfinely chopped
Salt
Pepper
Olive oilextra virgin
Instructions
Preheat oven to 200C, line a small baking tray with baking paper. Add the leek to the tray and drizzle over olive oil, salt and pepper. Roast for 15 - 20 minutes or until super golden brown.
Cook pasta to packet instructions, drain and leave aside.
Once the leek and pasta is cooked, add all the ingredients to a large mixing bowl and combine. Season with extra salt and pepper as needed
