    Leek and Feta Pasta Salad

    Need a delicious, healthy salad recipe that's perfect for meal prep? This Leek and Feta Pasta Salad is for you! I'm always on the hunt for healthy recipes that last well in the fridge and this is just that.

    Serve this Leek and Feta Pasta Salad as is or with your favourite protein. Some grilled fish, chicken or tofu would be great with it!

    Ingredients for Leek and Feta Pasta Salad

    • Leek
    • Feta
    • Orzo Pasta
    • Lemon
    • Red Onion
    • Cucumber
    • Basil
    • Oregano
    • Spinach
    • Salt
    • Pepper

    Hint: Use any herbs you like in this! I used basil however parsley or dill would be delicious too. Whatever you've got.

    Storage

    Store in the fridge for up to 4 - 5 days. Store the lemon and olive oil separately if not eating immediately.

    Ingredients
      

    • 1 cup orzo pasta
    • 3 leeks small, or 2 large leeks, chopped into bite size pieces
    • 180 g greek feta crumbled
    • 4 baby cucumbers 1 large cucumber, finely diced
    • 100 g baby spinach finely chopped
    • ½ red onion finely diced
    • 1 lemon juiced
    • ½ lemon zest
    • 1 teaspoon oregano dried
    • ½ cup basil finely chopped
    • Salt
    • Pepper
    • Olive oil extra virgin

    Instructions
     

    • Preheat oven to 200C, line a small baking tray with baking paper. Add the leek to the tray and drizzle over olive oil, salt and pepper. Roast for 15 - 20 minutes or until super golden brown.
    • Cook pasta to packet instructions, drain and leave aside.
    • Once the leek and pasta is cooked, add all the ingredients to a large mixing bowl and combine. Season with extra salt and pepper as needed
    • Enjoy!

      It was a hit! I love red onions and so I add one instead of 1/2. That was a mistake. Made it a second time with recommended measurements and it was chef kiss.

          Made it today for lunch and it was so so good! I fried leeks in the pan until charred to save time preheating the oven and it still turned out very yummy!
