Simple Crispy Tofu Rice Bowl

Sometimes I love spending time in the kitchen, getting creative and enjoying the process of making something delicious. Then there’s times where I don’t want to spend a second longer than I need to, to make something yummy and healthy.
This is why I love this Simple Crispy Tofu Rice Bowl recipe. I cook up a bunch of rice at the start of the week so that when I need something quick, healthy and delicious, I can whip up something like this in less than 10 minutes.

- 150 g extra firm tofu diced
- 1 teaspoon olive oil
- 2 teaspoon dark soy sauce
- ½ cup white rice cooked
- ½ cucumber finely diced
- ¼ avocado diced
- 2 tablespoon chives finely chopped
- 2 teaspoon crispy chilli oil
- ½ teaspoon fennel seeds
- 1 pack Korean toasted nori sheets
Bring a pan to medium/high heat with the olive oil
Add the tofu with the soy sauce and fry until crispy
Heat up your pre cooked rice and add to a bowl with the cucumber, avocado, chives, chilli oil and fennel seeds
Mix well, add an extra dash of soy sauce if needed
Scoop up the mixture with the nori sheets and enjoy!
