        Ingredients
          

        • 250 g noodles I used Evergreen La Mein Noodles
        • 2 tablespoon dark soy sauce
        • 1 tablespoon soy sauce
        • 1 tablespoon rice wine vinegar
        • 1 tbsp brown sugar
        • 6 garlic cloves minced
        • ½ red chilli finely diced
        • 5 spring onions white parts, halved longways
        • 1 tsp corn starch aka corn flour
        • 2 tablespoon cold water
        • 1 tablespoon oil neutral oil or olive oil
        • 1 tsp sesame seeds

        Instructions
         

        • Cook the noodles to packet instructions and leave aside.
        • Bring a pan to medium/low heat with the oil. Add the garlic and chilli and sauté for 2 minutes.
        • Add both soy sauces, the brown sugar and vinegar and stir. Let this simmer for 3 - 4 minutes until it starts to thicken a little.
        • Make a cornstarch slurry by mixing together cold water and corn starch. Add that to the pan and mix continuously. it will start to thicken up.
        • Add in the spring onion, give it a little mix then toss in the cooked noodles with a few extra tablespoon of water.
        • Continue to toss until everything is well combined.
        • Remove from the heat and serve with a sprinkle of sesame seeds and enjoy!

        Notes

        1. Cook Noodles Al Dente: Ensure the noodles are cooked al dente to prevent them from becoming mushy when mixed with the sauce.
        2. Stir Continuously: When adding the cornstarch slurry, stir continuously to avoid lumps and ensure a smooth, thickened sauce.
