This was inspired by my Shredded Tofu and Avocado Bagel Recipe. If eggs and bacon aren't tickling your fancy, you'll love this vegetarian bagel!

How to make this Crispy Bacon and Shredded Egg Bagel
This recipe isn't too complicated! Just roast the bacon, shredded the eggs and mix everything together and you've got yourself a delicious breakfast bagel

Roast the bacon in the oven

Grate the hard boiled eggs

Mix together the rest of the ingredients

Assemble between your bagel slices with the cheese and enjoy!
Hint: To shred your eggs as easily as possible, ensure they are cold. You could prep these a couple of hours ahead, or just let them sit in an ice bath for 10 - 15 minutes

FAQ
To get it super crispy! You can certainly use a pan, but I've found that roasting bacon in the oven gets bacon even crispier, plus you don't need too worry too much about splatter bacon fat everywhere.
If you don't like the idea of grated egg you can just mash it up with a fork!

Ingredients
- 1 bagel
- 3 slices bacon
- 3 hard boiled eggs
- 2 tablespoon dill
- 1 tablespoon butter

- Roast bacon in the oven at 200C until suuuper crispy, about 15 - 20 minutes
- Grate the eggs using the small holes of a cheese grater then mix in dill, a tablespoon of melted butter, salt and pepper
- Slice open your fresh bagel, add the cheese, then the egg and top with the bacon
