Combine all of the filling ingredients into a food processor

Ingredients
- 350 g high protein or extra firm tofu
- ½ cup chives roughly chopped
- ½ cup coriander roughly chopped
- 2 tablespoon fresh garlic minced
- 2 tablespoon fresh ginger minced
- 1 teaspoon sesame oil
- 1 tablespoon masses chicken style stock powder
- 1 tablespoon vegan fish sauce I used niulife vegan Fysh sauce
- Approx 35 - 40 dumpling wrappers
Instructions
- Roughly break up the tofu and add to a food processor with the rest of the Ingredients (excluding the wrappers obviously haha). Process until everything is well combined and herbs look finely chopped.
- Set up a little wrapping station with a small bowl of water, the wrappers, a tray and the tofu mixture. Spoon about a teaspoon or two of mixture into the centre of the dumpling wrapper, line one side of the wrapper with a small amount of water and close up your dumpling. (I recommend jumping on to YouTube and watching some tutorials. When first trying out my own dumplings I tried a few different ways to wrap them and stuck with the one I found easiest. At this point you can freeze the ones you aren’t going to cook today)
- Add them to a non stick pan on medium high heat with some oil, fry for 3 - 5 minutes, then add a table spoon water, cover with a lid and let them steam for 5 minutes. I like to serve mine with chilli oil, tamari, sesame and extra chives. Enjoy!
