Instructions

Pulse the ingredients in a food processor

This is the consistency you're after

Pipe the mixture onto the puff pastry. Take note here that I have left enough space on each side so I can fold the pastry over and seal shut.

Brush over milk and sprinkle on the sesame seeds. Bake and enjoy!
Hint: Use a fork to press down firmly and seal the edges of the pastry to prevent the filling from leaking out.

Store any leftover sausage rolls in an airtight container in the refrigerator for up to 3 days. To reheat, place them in a preheated oven at 180C for about 10 minutes or until heated through and crispy.
For freezing, place unbaked sausage rolls on a baking tray and freeze until solid. Transfer the frozen rolls to a freezer bag and store for up to 3 months. To bake, preheat the oven to 180C and bake from frozen for an additional 5-10 minutes.

Rotate the baking tray halfway through cooking to ensure even browning.

Vegan Lentil Sausage Rolls
Ingredients
- 2 cans lentils rinsed and drained
- 1 medium carrot roughly chopped
- 1 celery roughly chopped
- 1 small red onion roughly chopped
- 2 tablespoon tomato paste
- 3 garlic cloves minced
- 1 tablespoon fennel seeds
- 1 teaspoon thyme dried
- 1 teaspoon paprika
- 1 teaspoon sea salt flakes
- 1 tsp pepper
- ¼ cup oat milk or any milk
- 1 tablespoon sesame seeds
- 2 tablespoon flax meal
- 6 tablespoon water
- 4 sheets puff pastry
Instructions
- Preheat oven to 180C and line a large baking tray with baking paper. Get your puff pastry out of the freezer to begin thawing.
- Mix the flax meal with the water in a small bowl and leave aside. This is your flax "egg" which will thicken as it sits and bind all the ingredients.
- Add the carrot, onion, celery, garlic, tomato paste, fennel seeds, thyme, paprika, salt and pepper to a food processor and pulse 6 - 8 times until everything is finely chopped.
- Add the lentils and flax egg to the food processor and pulse again 3 - 4 times until you have a consistency similar to what I've photographed above. You essentially want to make sure that your veggies are finely chopped and about half of the lentils are still whole. Once you have reached this consistency, remove the blades from the food processor and mix with a spatula to ensure everything is well combined.
- Transfer the lentil mixture into a piping bag (or a sandwich bag if that's what you've got) and cut about an inch off the end of the bag. Slice a puff pastry sheet in half so you have two rectangles. Pipe the lentil sausage mixture just off the centre from one end of the sheet to he other. Brush the milk along the side that has less space/pastry. Fold the larger side of pastry over to meet at the milky side. Use a fork to seal the pastry together. Cut the sausage roll into 4 smaller sausage rolls (or whatever size you please) and repeat until you have used up all the puff pastry and lentil sausage mixture. You should have about 20 small sausage rolls.
- Brush the top of your sausage rolls with more milk then sprinkle the sesame seeds on top.
- Bake for 30 - 35 minutes or until the pastry is golden brown then serve with your favourite tomato sauce or chutney and enjoy!
